Mushroom Rice Pilaf
A creamy rice dish, with a touch of butter, aromatic onions and garlic, herbs and umami locally grown mushrooms.
Makes 4 servings
1 cup Rice
2 cups water (maybe more)
3 oz Onion
4 cloves Garlic
2 ea. Pimento
12oz Mushrooms
6 sprigs Thyme
Salt
Black pepper
1 ea. Bayleaf
2 oz Butter

In a sauce pot on medium heat, add half the butter, onion, garlic, pimento, saute until translucent, then add mushrooms, bayleaf a pinch of salt and black pepper, saute for a minute or two.

Add the rice and stir well, add a cup of water, bring to a boil and reduce to simmer.

Add the thyme and gradually add water as needed until rice is cooked and the consistency of the grain is to your liking. Once the rice is soft and not too grainy or wet add the remaining butter and salt to taste.
